2.4.11 we live in subtropical queensland Aus. and last xmas planted a rosella bush (in the hibiscus family) which grows rapidly and produces heaps of small red fruit all along the branches Made small amount of jam just to try-taste was wonderful, then because I am health concious, did another larger batch using the healthy sugar alternative Xylitol with great results Cost for fruit was the price of the young plant-few dollars but the xylitol is $17 for 500g but is available online for much less like $190 for a 25 kilo bag. Tastes yummy

oops, one more thing, for your peach jam, try putting in your crock pot and cook it over night. Turns out perfect and beats standing over a hot stove. I also do my apple butter the same way.

This summer I put up 32 quarts of peaches, but before I started I saw a recipe for Peach Pit Peel jam. I figured what the heck, I usually throw that all out. So I saved it all. The recipe said to just bearly cover with water and boil for 30 minutes and then let sit over night and strain it through cheesecloth. What I did was remove the pits and then ran every thing through my food mill and then made sugerless jam wtih it. It turned out GREAT. I'll never throw away pits and peels again.

Do you think a similar recipe would work with elderberries or blackberries?
