This past Friday’s CSA box was filled with lots more greens, including spinach, red lettuce (does this count as a green?), and a huge head of romaine lettuce that we used to make tasty dinner salads, but what made me happiest were all of the little surprises that were tucked into the bottom of the box.
Last week, there were a few garlic scapes in our box, but this week we had a big bunch of them (above, top left – aren’t they pretty?) that I made into a pesto, along with a bunch of arugula that was in the share. We also received a bag filled with peas, which were added to the fried rice that I made for dinner yesterday. Yum!
And the little kousa squash was the cutest thing. I still have to decide what to do with him, but I think I’ll sautee him in olive oil with a little garlic, salt, and pepper. Sounds like a great side dish to me.
Oh, and I still have to show you what I did with the lovely trio of beets that we received last week. That will be coming your way very soon.
