Gluten Free, Sugar Free Zucchini Pudding

I know that this may not look like much, but one bite instantly transports me back to my childhood summers. So, what is this weird, brownish food? In my family, we call it zucchini pudding, and my mum always made it during summer zucchini season. I was actually a bit surprised when I did a little bit of searching and found that pretty much all of the zucchini pudding recipes floating around are for savory puddings. Zucchini pudding, as I know it, is a cross between a custard-y pumpkin pie filling and zucchini bread, and it’s just wonderful served warm with a little milk — coconut milk in this instance — poured over the top.

Gluten Free, Sugar Free Graham Crackers

In all of my years of baking, I had never actually made graham crackers from scratch. It was always one of those things that I wanted to try, but when I didn’t have to worry about gluten and sugar it was just much easier to go and pick up a box at the store. For months, I had been looking for an excuse to experiment with a sugar free version of Rebecca Reilly’s gluten free graham cracker recipe, and I finally had one when my mum gave me the recipe for one of my favorite childhood desserts. I’ll let you know more about the dessert next time, but this time it’s all about the gluten free, sugar free grahams.

Dairy Free, Sugar Free Ice Cream

A few years ago, I bought my first ice cream maker. My head was filled with fantasies of making my own custom ice cream, flavored in any wild and wonderful way that I could imagine. It was a great time, and then I actually made something. My wild and wonderful custom ice cream ideas came crashing down when I discovered that, after an overnight session in the freezer, my ice cream was as hard as a block of ice. Like, a you-need-an-ice-pick-to-get-into-it hard.

Rainier Cherries

The evening before my last grocery shopping trip, I was paging through the latest issue of Cooking Light when, on the final page before the back cover, I spotted a luscious looking recipe for Rainier Cherry Crumble. I just had to make it! However, Rainier cherries grow in the Pacific Northwest (about as far from Boston as you can get in the mainland US) and have a notoriously short growing season. I closed the magazine and thought about making a mixed berry crumble because I surely wouldn’t be finding any Rainier cherries around here.

Gluten Free Sugar Free Brown Butter Raspberry Tart

Bon Appetit really hit one out of the park with their June 2009 issue, particularly with the feature called “Very Berry Desserts”. I’m all about the berry desserts and have already tried the Blueberry Shortcakes with Lemon Thyme Biscuits — I still need to work on the texture of the gluten free version of the biscuits to get them just right before I post about them here.

Gluten Free Sugar Free Whoopie Pies

You didn’t think that I’d leave you hanging with a recipe for luscious buttercream and nothing on which to slather it, now, did you? Well, I guess I did leave you hanging for a few days, but I’m here today to tell you all about the most incredible whoopie pies (aka gobs) that I’ve ever eaten. I’m not speaking in hyperbole, either. These things were awesome, better even than the gluten and sugar-filled version, in my opinion, anyway.
